Why ingredient type matters for grams-to-tablespoons

A tablespoon measures volume (14.787 mL in the US). Different ingredients fill that volume with different masses. The relationship is:

tablespoons = grams ÷ grams_per_tablespoon

Where grams_per_tablespoon = density × 14.787 mL.

Dense ingredients like honey pack more grams into each tablespoon. Light, airy ingredients like cocoa powder hold fewer grams per tablespoon. Using the same gram-per-tablespoon value for all ingredients would give wrong results for most of them.

The US tablespoon holds 14.787 mL. The Australian tablespoon holds 20 mL. This is a 35% difference and affects recipes significantly.

Calculation adjustment:

AU tablespoons = US tablespoons × (14.787 ÷ 20) = US tablespoons × 0.739

Recipe calls for 3 Australian tablespoons of honey:

3 AU tbsp × 20 mL = 60 mL honey Mass: 60 × 1.42 = 85.2 g honey

Portion control: The standard serving of olive oil on many labels is 1 tablespoon (14 g). Knowing this, you can pour directly onto a tared scale for exact portions.

Calorie calculation: 1 tablespoon of olive oil = 13.5 g × 9 kcal/g (fat) = 121 kcal. The label lists this as 119-120 kcal due to rounding, but the gram-based calculation confirms the number.

Recipe nutrition calculation: If you add 3 tablespoons of peanut butter to a recipe (3 × 16.1 = 48.3 g), you can look up the nutritional content for 48 g of peanut butter for an accurate total.


Accuracy and best practices for cooking measurements

For baked goods where small errors change results, weigh your ingredients rather than measuring by volume. A digital kitchen scale accurate to 1 g is the most reliable approach.

For measuring by volume: Use the correct cup standard for your recipe’s country of origin. Spoon ingredients into the cup rather than scooping. Level off with a straight edge. Read liquids at eye level with the measuring cup on a flat surface.

For measuring by weight: Tare (zero) the scale with the bowl on it. Add each ingredient directly to the bowl. Tare again between ingredients to add them one at a time without emptying the bowl.

Ingredient freshness: Old flour that has absorbed moisture weighs slightly more than fresh flour at the same volume. Weighing is unaffected by moisture absorption. Cup measurements become slightly off as dry ingredients age and their density changes.
