Tablespoon standards by country
One tablespoon does not mean the same volume in every country. This becomes important when following international recipes.

The Australian difference is the largest. An Australian recipe calling for 3 tablespoons uses 60 mL (3 x 20 mL), while the same recipe made with US tablespoons delivers only 44.4 mL (3 x 14.787 mL). This 35% difference can significantly change a dish.
When in doubt: Look at the country of origin for the recipe. If it is from an Australian cookbook or website, use the 20 mL tablespoon setting. If from a US recipe (most English-language online recipes), use the US 14.787 mL setting.
Why 1/3 cup is the “awkward” fraction
Every common cup fraction converts cleanly to tablespoons except 1/3:
- 1/4 cup = 4 tablespoons (clean)
- 1/2 cup = 8 tablespoons (clean)
- 3/4 cup = 12 tablespoons (clean)
- 1/3 cup = 5.333 tablespoons = 5 tablespoons + 1 teaspoon (awkward)

The reason is that 1/3 of 16 is not a whole number. The workaround used in recipes: “5 tablespoons + 1 teaspoon” because 1/3 tablespoon = 1 teaspoon (since 1 tablespoon = 3 teaspoons).
For baking, if you do not have a 1/3 cup measuring tool, measure out 5 tablespoons and then add 1 level teaspoon to get an accurate 1/3 cup. Alternatively, use a 79 mL measure on a liquid measuring jug.

Understanding where tablespoon-to-cup conversions appear most often:

Scaling recipes requires converting back and forth between tablespoons and cups:
Doubling a recipe:
