Tablespoon standards by country

One tablespoon does not mean the same volume in every country. This becomes important when following international recipes.

The Australian difference is the largest. An Australian recipe calling for 3 tablespoons uses 60 mL (3 x 20 mL), while the same recipe made with US tablespoons delivers only 44.4 mL (3 x 14.787 mL). This 35% difference can significantly change a dish.

When in doubt: Look at the country of origin for the recipe. If it is from an Australian cookbook or website, use the 20 mL tablespoon setting. If from a US recipe (most English-language online recipes), use the US 14.787 mL setting.


Why 1/3 cup is the “awkward” fraction

Every common cup fraction converts cleanly to tablespoons except 1/3:

  • 1/4 cup = 4 tablespoons (clean)
  • 1/2 cup = 8 tablespoons (clean)
  • 3/4 cup = 12 tablespoons (clean)
  • 1/3 cup = 5.333 tablespoons = 5 tablespoons + 1 teaspoon (awkward)
  • 2/3 cup = 10.667 tablespoons = 10 tablespoons + 2 teaspoons (awkward)

The reason is that 1/3 of 16 is not a whole number. The workaround used in recipes: “5 tablespoons + 1 teaspoon” because 1/3 tablespoon = 1 teaspoon (since 1 tablespoon = 3 teaspoons).

For baking, if you do not have a 1/3 cup measuring tool, measure out 5 tablespoons and then add 1 level teaspoon to get an accurate 1/3 cup. Alternatively, use a 79 mL measure on a liquid measuring jug.


Tablespoons in common recipes

Understanding where tablespoon-to-cup conversions appear most often:

Butter: US recipes frequently call for butter in tablespoons. 1 stick of butter = 8 tablespoons = 1/2 cup = 113.4 g. A recipe calling for “4 tablespoons of butter” wants 1/4 cup = half a stick.

Oil: Salad dressing recipes often use tablespoons. 4 tablespoons of olive oil = 1/4 cup = 59 mL. A standard vinaigrette ratio of 3:1 oil to vinegar often uses “6 tablespoons oil + 2 tablespoons vinegar” — converting to cups: 3/8 cup oil + 1/8 cup vinegar.

Honey and syrup: Small quantities of sweeteners are measured in tablespoons. 2 tablespoons of honey = 1/8 cup = 29.6 mL.

Spice pastes and condiments: Recipes using tahini, peanut butter, or miso often call for 2 to 6 tablespoons. 6 tablespoons = 3/8 cup.

Liquids (milk, cream, stock): When a recipe calls for “a cup plus 2 tablespoons,” the total is 18 tablespoons = 266 mL = about 1.125 cups.


Tablespoon to cup conversion for doubled and halved recipes

Scaling recipes requires converting back and forth between tablespoons and cups:

Doubling a recipe:

  • 2 tablespoons x 2 = 4 tablespoons = 1/4 cup
  • 3 tablespoons x 2 = 6 tablespoons = 3/8 cup
  • 8 tablespoons x 2 = 16 tablespoons = 1 cup
  • 12 tablespoons x 2 = 24 tablespoons = 1.5 cups

Halving a recipe:

  • 1 cup / 2 = 8 tablespoons = 1/2 cup
  • 3/4 cup / 2 = 6 tablespoons = 3/8 cup
  • 1/3 cup / 2 = 2 tablespoons + 2 teaspoons
  • 1/4 cup / 2 = 2 tablespoons

The most difficult halving is any fraction involving 1/3 because halving 5 tbsp + 1 tsp gives 2.5 tbsp + 0.5 tsp, which requires either a 1/2-tablespoon measure or careful teaspoon counting (2 tbsp + 1.5 tsp = half of 1/3 cup).
